Chaulai ke Laddoo is a North Indian recipe which is mainly preferred during the fasting days. Chaulai, which is also known as amaranth is very good for health because it keeps you warm in chilly winters. These laddoos taste delectable and are even light for stomach. To start with, heat 3 tbsp ghee in a non-stick pan and roast amaranth seeds on a medium flame until they make a popping sound. When done, transfer them to a large container to cool.
Meanwhile, take another pan and add jaggery and water in it. Melt jaggery on a medium flame. When melted, transfer them to the large container containing roasted amaranth seeds. Mix them well to incorporate jaggery with amaranth seeds. Let it cool slightly.
When cooled, mix the ingredients well with using your hands. Grease your hands with ghee and take a small portion of mixture in between your palms. Shape it in a form of round laddoos. Shape as many laddoos you want.
When done, place them on a parchment paper and keep them aside to cool. Either you can have it once the laddoos are set or you can store it in an air-tight container.
